A Sunday or two ago I helped throw a little celebratory picnic for my flatmate, because what better way to say ‘hey you done good girl’ than through a feast in the sunshine surrounded by friends? Lazing on rugs and basking in the warmth, we grazed and munched and shared. Some bright spark (nope not me!) made a version of the traditional Japanese okonomiyaki pancakes, and I haven’t been able to stop thinking about them since. So here we go, my spin-off recipe of her spin-off recipe, stuffed into crispy crunchy baby gem lettuce leaves, and topped with as many bonus extras you can balance on top/fit in your mouth while still maintaining a small shred of dignity.
