You’ve heard about protein, the one macronutrient where everyone can agree that eating protein is good, phew no drama there (FYI so are fat and carbohydrate but let’s chat about that another time). Normally we associate protein with meat, fish and eggs, but protein can also be found in plenty of plant sources too. Quinoa for example, is an ancient seed commonly mistaken for a grain and has a similar amount of protein as eggs (both have around 13g per 100g), as well as containing each of the nine essential amino acids that are the building blocks of protein. I like to think that I’ve surprised you with that little fact? Probably not. In that case I hope I’ve just provided you with a good excuse to make this delicious pea, preserved lemon and quinoa salad.
I’d love to know what your favourite salad combinations are? What’s your go-to salad?
