I don’t know why but at some point in life, time seemed to speed up and before I know it I blink and the day’s gone! There always seems to be more that I wanted to achieve AND I’d love to learn to play the piano, maybe do some pottery classes, but then also have time for myself, a little pause, a moment for me….am I asking a lot?
Having some ready-made pots of chia pudding in the fridge is a great little grab-to-go breakfast/after-work sugar cravings buster/have as dessert little wonder, and hopefully will give you a little more time in your day for YOU time. This recipe is just sunshine in a bowl, full of goodness and summer flavours. Chia seeds are one of only a few plant-based sources of omega-3, essential fatty acids that the body can’t make for itself and are really important for body and brain function. Mango’s amazing golden yellow colour is due to a pigment called beta-carotene, which conveniently is also a powerful antioxidant with disease-fighting properties. It’s also packed with potassium, vitamin C, K, A, iron, choline, fibre, amongst others in case you were curious! Although mango is one of the sweeter fruits, by combining with protein (found in the tofu and chia seeds) you stay full for longer and keep your sugar levels nice and steady.
